Low Fodmap Triple Choc Cookies

These cookies are a Lofofoodie favourite and will not last long so keep them in safe place!

Ingredients
  • 150gm unsalted butter, softened
  • 2 Cups brown sugar
  • 2 Large eggs
  • 2 Tsp vanilla extract
  • 1/4 Cup Raw Cacao
  • 1 1/2 Tsp bicarb soda
  • 2 1/2 Cups Plain gluten free flour
  • 1 Tbs Salt
  • 400 grams >75% cocoa dark cooking chocolate, melted
Directions
  • Step 1 Preheat oven to 180°c and pre-prepare grease baking tray.
  • Step 2 Take 400gm of the chocolate and melt. Set aside to cool slightly.
  • Step 3 Using a mixer, cream butter and sugar until fluffy, scraping the sides once.
  • Step 4 Slowly add the eggs one after the other stirring consistently.
  • Step 5 Mix in vanilla extract and set aside.
  • Step 6 In a separate bowl, sift in flour, bicarb soda, cacao and salt and mix together. Then gradually add in batches to the mixer until all well combined.
  • Step 7 Take the melted chocolate and slowly add in to the mixture until well mixed.
  • Step 8 Using two teaspoons or a cookie scoop, take mixture and make in to walnut shaped balls. Place evenly on baking tray ensuring enough space for each cookie to expand.
  • Step 9 Bake for 8-10 minutes or until chocolate cookies are firm but chewy in consistency.
  • Step 10 Once cookies are baked, remove from oven and place on cooling tray to completely cool.

  • 150gm unsalted butter, softened
  • 2 Cups brown sugar
  • 2 Large eggs
  • 2 Tsp vanilla extract
  • 1/4 Cup Raw Cacao
  • 1 1/2 Tsp bicarb soda
  • 2 1/2 Cups Plain gluten free flour
  • 1 Tbs Salt
  • 400 grams >75% cocoa dark cooking chocolate, melted
Directions
  • Step 1 Preheat oven to 180°c and pre-prepare grease baking tray.
  • Step 2 Melt 400gm chocolate in TM bowl and set aside (see chocolate melting instructions here)
  • Step 3 Place butter and sugar in TM bowl and beat for 30 secs/ – / Speed 7 scraping sides in between.
  • Step 4 Add eggs and vanilla extract and beat for a further 20 secs/ – / Speed 5.
  • Step 5 Next, take all dry ingredients and sift in to bowl together. Gently add the melted chocolate in to the bowl and mix well.
  • Step 6 Add the mixed ingredients to the TM bowl and blend for 60 secs/ – / Speed 1.5.
  • Step 7 Using two teaspoons or a cookie scoop, take mixture and make in to walnut shaped balls. Place evenly on baking tray ensuring enough space for each cookie to expand.
  • Step 8 Bake for 8-10 minutes or until chocolate cookies are firm but chewy in consistency.
