These deliciously healthy zucchini fritters are incredibly easy to make and are surprisingly filling. (Buckwheat flour is low Fodmap in serves of up to 100gm. This recipe is 8gm/fritter)

Ingredients
  • 500g zucchini
  • 1/2 tsp salt
  • Pinch of black pepper
  • 100g parmesan cheese
  • Handful fresh dill
  • Handful fresh parsley
  • 80g buckwheat flour
  • 2 eggs
  • Coconut oil for frying
Directions
  • Step 1 Grate zucchini with a coarse grater blade and place in a sieve over a bowl and press with back of spoon to remove as much moisture as possible.
  • Step 2 Place drained zucchini in a large bowl and add chopped dill and chopped parsley and mix well
  • Step 3 Add buckwheat flour, eggs,  salt, pepper and mix until well combined.  Grate parmesan in to mixture. Lightly stir mixture with spatula to incorporate parmesan and check for consistency. If too loose, add additional buckwheat flour.
  • Step 4 Heat a tablespoon of coconut oil in a large fry pan over medium heat. Add mixture to pan in batches as with pancakes and cook until golden brown on both sides (usually 3 mins).
  • Step 5 Sprinkle with dill and serve with chilled lactose free yogurt.

Ingredients
  • 500g zucchini
  • 1/2 tsp salt
  • Pinch of black pepper
  • 100g parmesan cheese
  • Handful fresh dill
  • Handful fresh parsley
  • 80g buckwheat flour
  • 2 eggs
  • Coconut oil for frying

  • Step 1 Chop the parmesan roughly in to cubes and place in TM bowl. Chop for 10secs/-/Speed 10. Remove from TM bowl and set aside.
  • Step 2 Chop the zucchini roughly in to slices 2cm wide and place TM bowl, chop for 2 secs/-/Speed 5, or until coarsely grated. Place grated zucchini in a sieve over a bowl and press with back of spoon to remove as much moisture as possible.
  • Step 3 Return zucchini to TM bowl and add dill and parsley and chop for 5 secs/-/speed 9.
  • Step 4 Add buckwheat flour, eggs,  salt, pepper and reserved parmesan and mix for 20 secs/-/Speed 3 Reverse. Lightly stir mixture with spatula to check for consistency, if too loose, add additional buckwheat flour.
  • Step 5 Heat a tablespoon of coconut oil in a large fry pan over medium heat. Add mixture to pan in batches as with pancakes and cook until golden brown on both sides (usually 3 mins).
  • Step 6 Sprinkle with dill and serve with chilled lactose free yogurt.
