Low Fodmap Chocolate, Raspberry Walnut Brownie

Low Fodmap Chocolate Raspberry & Walnut Brownie

Everything good about the Low Fodmap diet can be found right here in these brownies. The perfect compliment to a hot peppermint tea or a decadent dessert.

Ingredients
  • 60gm gluten-free self-raising flour
  • 180gm butter
  • 220gm dark chocolate >70%
  • 4 Tbs walnuts (and some for garnish)
  • 100gm frozen raspberries
  • 3 large eggs at room temp
  • 175gm fine sugar
  • pinch of salt
Directions
  • Step 1 Pre-heat your oven to 200°C
  • Step 2 Line a baking tray 25x25cm and set aside.
  • Step 3 In a saucepan, add chocolate and butter and melt slowly over low heat. Set aside.
  • Step 4 Take a large bowl and add the GF flour, eggs, sugar, salt and crushed walnuts. Mix until well combined. Then slowly add melted chocolate and butter mixture, folding through as it is being added.
  • Step 5 Pour the well blended mixture in to the pre-prepared baking tray. Gently press frozen berries and remaining crushed walnuts in to the top of the mixture and place in the oven.
  • Step 6 Bake for 20 minutes or until the cake becomes firm to the touch.
  • Step 7 Remove from oven and allow to cool for a few minutes before lifting out from tray and placing on a chopping board.
  • Step 8 Slice in to even pieces.

  • Step 3 Add chocolate and butter to mixing bowl and melt – 3:30 mins / 50°C / speed 2. Place in to bowl and set aside.
  • Step 4 Add to whisk to the mixing bowl.
  • Step 5 Add to mixing bowl the GF flour, eggs, sugar, salt and crushed walnuts. Mix until well combined. 30 sec / – / speed 4.  Then, remove mixing bowl lid and add melted chocolate and butter mixture. Mix well again, 30 sec / – / speed 3
  • Step 6 Pour the well blended mixture in to the pre-prepared baking tray. Gently press frozen berries and remaining crushed walnuts in to the top of the mixture and place in the oven.
  • Step 7 Bake for 20 minutes or until the cake becomes firm to the touch.
  • Step 8 Remove from oven and allow to cool for a few minutes before lifting out from tray and placing on a chopping board.
  • Step 9 Slice in to even pieces.
