It is not easy to find someone that doesn't like Chocolate Mousse as an after dinner treat - or at any time for that matter! This recipe is super simple and tastes wonderful Fully Low Fomdap of course and liek all of our recipes, suitable on the elimination diet. Yes, Chocolate Mousse on an elimination diet. Things aren't so bad after all.

Ingredients
  • 200gm Dark Chocolate (>85% Cocoa)
  • 2 medium eggs (room temperature)
  • Handful of hazelnuts
  • 100ml Maple Syrup
Directions
  • Step 1 Melt dark chocolate on stove top. Bring about 3cm of water to a simmer in your saucepan. Set a heatproof bowl in the mouth of the pot, making sure the water doesn’t touch the bottom of the bowl. Stir chocolate occasionally as it softens. When you have just a few small unmelted chunks, remove bowl from heat (residual heat will melt the rest)
  • Step 2 Crack and separate two eggs. Add egg yolks to melted chocolate and stir well.
  • Step 3 Start beating the whites at low speed using a hand mixer until they are foamy, and then and speed up to medium. Do not beat on high. Continue until stiff. Then fold stiff egg whites in to the chocolate mixture.
  • Step 4 Place mixture in to two serving bowls and move to refrigerator for approx 2 hours.
  • Step 5 5 minutes before chocolate is ready, gently crush hazelnuts with the back of a large knife.
  • Step 6 Pour maple syrup in to bowl and add in hazelnuts. Leave sit for 3 minutes.
  • Step 7 Remove chocolate Mousse from fridge and pour maple hazelnut mixture over ready to serve.


Chocolate Mousse with Hazelnut Syrup Thermomix Method

Whip up this beauty in only a few minutes in the Thermomix. Sit in the fridge to cool for a couple of hours and you will be sitting down a super simple, super enjoyable little Low Fodmap Chocolate Mousse.

Ingredients
  • 200gm Dark Chocolate (>85% Cocoa)
  • 2 medium eggs (room temperature)
  • Handful of hazelnuts
  • 100ml Maple Syrup
Directions
  • Step 1 Cut chocolate in to small pea like pieces and add to mixing bowl. Cook for 7 min/50°/2. Once melted, place in separate bowl.
  • Step 2 Crack and separate two eggs. Add egg yolks to melted chocolate and stir well.
  • Step 3 Place both egg whites in the mixing bowl, being careful not to get ANY egg yolk in the bowl. Mix the egg whites until stiff – 4 min/37°/2. Peer through mixing bowl lid hole to see if egg whites are stiff. If not, add 30 sec until eggs stiff. Add stiff egg whites to chocolate mixture. Stir well.
  • Step 4 Place mixture in to two serving bowls and move to refrigerator for approx 2 hours.
  • Step 5 5 minutes before chocolate is ready, place hazelnuts in Mixing bowl and roughly chop for 5 sec/0/4.
  • Step 6 Pour maple syrup in to bowl and add in hazelnuts. Leave sit for 3 minutes.
  • Step 7 Remove chocolate Mousse from fridge and pour maple hazelnut mixture over ready to serve.
