Ingredients
  • 250g Gluten Free Pasta
  • 30g Pine Nuts
  • 2 tbs cooking oil
  • 500g Roasted Jap Pumpkin
  • 150g Sliced Radish
  • 2 Sprigs Fresh Dill
  • Grated Parmesan to Taste
  • DRESSING
  • Pinch of Pepper
  • Pinch of Salt
  • 3 tbs Olive Oil
  • 1 tbs Mustard
  • Juice of 1 Lemon
  • Juice of half Orange
Directions
  • Step 1 Brown the Pine Nuts in oil of your choice
  • Step 2 Cook pasta and drain then transfer pasta to large bowl
  • Step 3 Add sliced radish, pine nuts, roasted Jap pumpkin, grated parmesan and chopped fresh dill.
  • Step 4 Mix all ingredients well
  • Step 5 Prepare dressing by missing all dressing ingredients together and mixing well
  • Step 6 Transfer pasta mix to serving plate and cover with dressing
  • Step 7 Grate parmesan over salad prior to eating
